Recipe: Pomegranate Pistachio Chia Pudding Breakfast



This is a brilliantly simple breakfast recipe that I often make for my family the night before in individual bowls. This way everyone gets a good start to the day without having to think about it and avoids my teens skipping breakfast (which inevitably leads to a trip to Gregg’s mid-morning!)

Serves 1

Ingredients:

3 tbsp chia seeds

180mls coconut or almond milk

(unsweetened)

1 tsp vanilla extract

40g pomegranate seeds

1 tbsp pistachios, chopped


Method:


1. In a small bowl, combine chia seeds, vanilla and milk.

2. Cover and refrigerate for 20 mins (or overnight).

3. When ready to serve, stir the chia mixture, then layer in a glass with pomegranate seeds.

4. Top with pistachios.
